We offer this delicious Banana bread  as part of our breadboard selection and it has proved to be really popular. The cinnamon just adds and extra dimension and you end up with real comfort food. We love ours served with Irish butter – delicious !!!

 

Preheat the oven to 350 F/180 C/gas Mark 4. Lightly grease a 2lb loaf tin

Put the sugar, butter and eggs in a bowl and beat until creamy.

Add the bananas and vanilla essence.

Sieve the flour, cinnamon and soda into the mixture and stir in until just mixed. Do not overwork it.

Transfer the mix to the loaf tin and bake for 40 – 50 minutes until risen and golden brown

Allow to cool in the tin for 10 minutes and then transfer to a wire tray to cool.

Serve with butter and enjoy !!!
