- 175g Plain Flour
- Finely grated zest of one lemon
- 110g soft Butter
- 50g Caster Sugar
Rub the butter into the floor and lemon zest. Add the caster sugar and bring the mixture together in a bowl. Roll out to ½ cm thickness and cut out with a cookie cutter.
Place in a preheated oven 180 degrees celcius for 10 minutes until pale golden
Remove and cool on a wire rack.
