Preheat your oven to 170C/340F/Gas 3½
Grease a 9 inch pie dish
Pastry: Sift the flour into a large mixing bowl and using your finger tips rub the butter into the flour. Add the sugar and salt. Add the beaten egg and a little ice cold water to bring the dough together. Wrap the dough in plastic wrap and leave to chill for one hour in the fridge.
Filling: Peel, core and slice your apples. Place into a saucepan with the syrup and whiskey over a low heat. Simmer for approx. 3 minutes or until the butter is soft. Remove from heat and leave to cool slightly (otherwise it will melt the pastry),
Custard: Add all your ingredients – eggs, egg yolks, butter, sugar and cinnamon into food processor, and bring together.
Roll out half the pastry on a floured surface and freeze the other half for next time. Lay the pastry into the pie dish.
Add the apple mixture and pour the custard mixture over it.
Bake in the oven for 30 minutes or until the custard has set.
