If you are not a lover of the traditional Christmas cake you really should try this cake – it is really delicious and when it’s cooking it fills the kitchen with the most wonderful aroma.

Line the base of a 20.5com round and 5cm deep tin with greaseproof paper the grease and flour the tin.

Mix the breadcrumbs with the sugar, almonds and baking powder. Whisk the oil with the eggs, then pour into the dry ingredients and mix well. Add the orange and lemon zest. Pour the mixture into the tin, place in a cold oven and turn on the heat to 180 degrees C/gas mark 4.

Bake for 45 minutes to 1 hour or until the cake is golden brown. Use a skewer to check if the cake is cooked by inserting it into the centre – if it comes out clean it the cake is cooked. Allow to cool and turn out onto a plate. Serve with whipped cream or greek yoghurt – delicious.
